焦糖布丁

制作步驟制作焦糖01細(xì)砂糖和食用水倒入奶鍋中,中小火煮至棕褐色;

02把煮好的焦糖倒入模具中,薄薄的一層就可以了,倒完后拿起來轉(zhuǎn)動一下,讓焦糖覆蓋模具底部,放到一旁晾涼備用;

預(yù)熱烤箱03烤箱上下火160度預(yù)熱;

制作布丁液04鍋中倒入細(xì)砂糖、純牛奶、淡奶油和香草精,開中火,用刮刀輕輕攪拌,煮至細(xì)砂糖完全融化就可以了;

05此時溫度大概60度左右,煮好之后離火,放一旁備用;

06在碗里加入全蛋液和一個蛋黃,用打蛋器攪拌均勻,不需要太大力,防止打入過多的空氣產(chǎn)生氣泡;

07把煮好的奶液倒入蛋液中,用打蛋器攪拌均勻;

08混合均勻的布丁液過篩兩次,把蛋筋過濾出來,這樣順滑的布丁液就做好了;

組合布丁09拿出晾涼了的焦糖,把布丁液倒進(jìn)去,大約倒至8分滿;

10在模具上蓋一層錫紙,防止烤完后表面結(jié)皮;

烘烤11在烤盤里倒入至少1厘米高的熱水,然后慢慢放入烤箱中,水浴法烘烤40分鐘,出爐后打開錫紙,布丁表面光滑,無液體流下來,這樣布丁就烤熟了;TIPS:如果大家擔(dān)心轉(zhuǎn)移的時候水灑出來,可以把烤盤放入到烤箱里面之后輕輕拉出來,然后再倒入熱水,這樣子會更加安全一些。

12布丁烤好后,放入冰箱的冷藏室里,冷藏至少1小時之后再食用,這樣焦糖布丁就做好咯~
