制作海綿蛋糕:①預(yù)熱烤箱至180度②蛋黃加細(xì)砂糖25g用電動(dòng)打蛋器攪打至顏色發(fā)白、體積微微膨脹

③蛋白分2-3次加入細(xì)砂糖,用電動(dòng)打蛋器攪打至提起打蛋頭有大彎鉤,蛋白細(xì)膩有光澤

④取1/3的蛋白混合進(jìn)蛋黃糊,用蛋抽攪勻

⑤篩入低筋面粉,用刮刀翻拌均勻至完全沒有干粉的狀態(tài)

⑥黃油和牛奶微波爐高火加熱15秒,然后攪一攪使黃油完全融化,和牛奶充分融合,晾在一邊備用

⑨將面糊倒入鋪了烤紙的28*28cm方形烤盤,輕輕震一下模具排出其中的氣泡。放入預(yù)熱到180度的烤箱,180度烤13分鐘左右,取出倒扣在晾網(wǎng)上,撕掉烤紙,晾涼備用

組裝&裝飾:①用四寸慕斯圈在蛋糕體上刻出4片蛋糕
